When it comes to entertaining, I love having recipes in my back pocket that are not only easy to prepare but also have a “wow” factor.
One of my go-to dishes is baked feta. It’s a Mediterranean-inspired delight that always impresses and can be effortlessly scaled up to feed a crowd.
Plus, it takes minimal effort—perfect for when you want to spend more time enjoying the party than in the kitchen!

Baked Feta Recipe

Here’s how you can make this easy and delicious dish:

Ingredients:

  • Olive oil
  • 1 clove of garlic, sliced
  • Pinch of chilli flakes
  • 400g tin cherry tomatoes*
  • a small handful of leaves oregano, chopped**
  • 200g block of feta***

Instructions:

  1. Heat 1 TBSP olive oil in a pan or cast iron pot, add the garlic and cook for a minute. Add the chilli and tomatoes and simmer for 25 minutes until thickened. This will reduce the liquid as well as tease out more of the lovely tomato sweetness. Season with salt & pepper and stir in the oregano. (Step 1 can be done in advance. Complete the next steps just in time for the arrival of your guests.)
  2. Heat the oven to 200 degrees Celsius.
  3. Put the feta in an ovenproof dish, cover with sauce and bake for 20 minutes.
  4. Serve warm with some crusty bread. Yum!

Notes:

* Oregano: You can use dried oregano of you don’t have fresh one, however dried oregano is generally are much stronger in flavour. I recommend using about 1 tsp to substitute the fresh herb.
** Tinned cherry tomatoes are great in this dish as they tend to be sweeter than normal tomatoes. It’s worth hunting them down, but they can be substituted with normal tinned tomatoes.
*** Feta: Use a less crumbly one here as crumbly fetas can dry out even further in the oven which makes them hard.

Why Baked Feta?

This dish is the perfect combination of salty, creamy and tangy, with a hint of sweetness from the slow-cooked tomatoes. I love serving it with chunks of warm crusty bread for everyone to dig in.
The best part? It’s a one-pan wonder, making cleanup as easy as the preparation.
