- 1½ TBSP milk
- 2 egg yolks
- 125 g soft butter
Additionally:
- 2 egg whites
- 1 pinch of salt
- 125 g caster sugar
- 60 g ground walnuts
- 1 egg yolk for brushing
- 30 g chopped pistachios

Let’s bake Nusskipferl Cookies:
- Sift the flour into a mixing bowl. Add the dried yeast, powdered sugar, milk, egg yolks and soft butter (cut into pieces), then knead into a smooth dough. Wrap in foil and chill in the fridge for about 20 minutes.
- Meanwhile, whisk the egg whites with the salt. Gradually sprinkle in the sugar and continue whisking until the mixture gets glossy and forms peaks.
- Preheat the oven to 160°C (fan-assisted). Line two baking trays with parchment paper.
- Halve the dough. Roll each half into a roll and then roll out into small rectangles (about 15 x 30 cm) on a floured surface. Spread half of the egg white mixture over each rectangle and sprinkle with half of the walnuts. Carefully roll up from the long side and lightly flatten.
- Use a glass with a thin rim to cut out crescent shapes (about 5 cm high). Place them on the prepared baking trays, ensuring adequate spacing.
- Mix the egg yolk with 1 tbsp water and brush over the crescents. Sprinkle with chopped pistachios and bake for 12–15 minutes, checking occasionally.
