If you’re a chocolate lover, these decadent, gooey chocolate brownies are about to become your new obsession. Adapted from Jamie Oliver’s classic recipe, these brownies are rich, indulgent and incredibly easy to make.
With a fudgy center and a perfectly crisp top, they’re bound to impress whether you’re baking for a crowd or treating yourself. After years of making them, I can confidently say they are foolproof and irresistible!
Gather your ingredients for your chocolate brownies:
- 200g quality dark chocolate (70%)
- 250g unsalted butter
- 80g chopped hazelnuts
- 80g cocoa powder
- 65g all-purpose flour
- 1 tsp baking powder
- 360g caster sugar
- 4 large eggs at room temperature

Get baking:
- Preheat the oven to 180°C.
- Line a 24cm square baking tin with baking paper.
- Snap the chocolate into a large bowl, add the butter and place over a pan of simmering water, until melted, stirring regularly. Stir through the nuts.
- Sift the cocoa powder & flour into a separate bowl, add the baking powder & sugar, then mix together.
- Add the dry ingredients to the melted chocolate mixture and stir together well.
- Beat the eggs, then mix in until you have a silky consistency.
- Pour the brownie mix into the baking tin, and place in the oven for around 25 minutes. You don’t want to overcook them so, unlike cakes, you don’t want a skewer to come out clean – the brownies should be slightly springy on the outside but still gooey in the middle.
- Allow to cool in the tray & serve with a dollop of crème fraîche, mascarpone or yoghurt & sprinkle with some grated orange zest. Enjoy! x
