These delicate, almond-flavoured mini cakes are a staple in Australian and New Zealand bakeries and today, I’m bringing a fruity twist to this classic treat with my Raspberry Friands recipe. Perfectly soft, these little cakes are bursting with juicy raspberries, making them an ideal companion for your afternoon tea or a sweet finish to any meal.

What makes this recipe even more appealing is how easy it is to whip up. You don’t need any fancy techniques or equipment – just a few simple ingredients and a friand tin and you’re good to go! Whether you’re a seasoned baker or a newbie in the kitchen, this recipe is straightforward and utterly rewarding. Gather your ingredients:

  • 6 egg whites at room temperature
  • 150g unsalted butter, melted & cooled
  • 125g ground almonds
  • 250g powdered sugar
  • 100g flour
  • 125g raspberries – fresh or frozen (defrost in a colander to avoid the friands getting soggy)

Get baking:

  1. Preheat oven to 160 degrees Celsius & lightly grease a 12-hole friand tin (I use non-stick cooking spray for an even coating).
  2. Whisk egg whites with butter and ground almonds.
  3. Sift in flour and powdered sugar & whisk until combined.
  4. Divide between the 12 holes of the tin & place 3-4 raspberries on top of each friand.
  5. Bake for 25-30min (until a skewer inserted into the centre comes out clean).
  6. Remove from oven, leave them in the tin for 5min, then tip them out onto a wire rack.
  7. Friands are best served warm on the day they were baked dusted with a little extra powdered sugar. Yum!
