This frittata is a perfect blend of earthy mushrooms, tangy goat cheese, and vibrant kale, all brought together in a light, fluffy egg base.

Ingredients:
- Olive oil
- 300g button mushrooms sliced
- 1 red pepper diced
- 15g unsalted butter
- 3 cups kale (or spinach) leaves roughly chopped
- 3 cloves garlic minced
- Salt
- 8 eggs
- ⅓ cup whole milk
- 100g goat cheese
- Salt & pepper
Get cooking:
- Heat oven to 205 degrees Celsius.
- Heat a large cast iron pan (ca. 30cm) over medium-high heat. Once hot, add 2 TBSP olive oil.
- Add sliced mushrooms and diced pepper to the hot oil and saute until lightly browned (6-8 min).
- Add butter, kale (or spinach), garlic and ¼ tsp salt. Saute until kale (spinach) is wilted and a little crispy. Turn the heat off.
- Whisk together eggs, milk, ¼ tsp salt & ¼ tsp pepper.
- Crumble goat cheese across the veggies & pour the egg mixture evenly over everything.
- Bake uncovered for 14-16 min. The frittata is done when the edges are golden and pulling away from the cast iron a bit.
- Remove from the oven and let it cool down a little.
I like to serve the frittata with a simple side salad and some chutney.
