How to make Spicy Baked Eggs with Kale, Potatoes & Goat Cheese
Ingredients:
- Olive oil
- Small onion, chopped
- 3 cloves garlic, crushed
- Chilli powder to taste
- Smoked paprika to taste
- Salt
- 1/2 cup vegetable stock
- 2 cans chopped tomatoes
- 4 eggs
- 1 cup potatoes, chopped
- 2 cups kale (or spinach), chopped
- Goat cheese
- Fresh herbs (dill, coriander, parsley – any soft herb you have at hand)
Get cooking:
- Heat 1 TBSP of olive oil in a large pot and saute the onions until very soft.
- Add garlic, salt, chilli powder & smoked paprika (according to your taste & the spiciness of your chilli powder), vegetable stock & tomatoes.
- Simmer for 10-15 min. Puree sauce until smooth (I use a stick blender).
- Heat 1 TBSP of oil in the same pot, add the potatoes and some more chilli powder. Brown the potatoes for a few minutes. Add the sauce back to the pot and simmer for another 10-15 min until the potatoes are soft.
- Stir in the kale/ spinach and let it wilt. Make little holes for the eggs using a spoon on top of the mixture. Crack the eggs into the holes and cover the pot with a lid.
- Turn the heat to low and cook the eggs for 10 min. Remove from heat and keep covered for another 5 min. This should result in medium-soft yolks.
- Top with goat cheese & herbs and serve with crusty bread.
