Gather your ingredients:

  • 140g butter (softened at room temperature)
  • 1 cup sugar
  • Zest of 2 lemons
  • 1 egg (at room temperature)
  • 1 egg yolk (at room temperature)
  • 2 TBSP fresh lemon juice
  • 1.5 tsp pure lemon extract
  • 5 drops yellow food colouring
  • 2 cups flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • Powdered sugar (1/4 – 1/2 cup)

Get baking:

  1. Preheat oven to 175 degrees Celsius & line a baking tray with baking paper.
  2. Use your stand mixer with the paddle attachment and cream the butter until soft, then mix in sugar and lemon zest.
  3. Add the egg, egg yolk, lemon juice, lemon extract and yellow food colouring. Mix thoroughly.
  4. Sift the flour, baking powder and salt into a separate bowl and mix them together. Add the dry ingredients to the wet ingredients until incorporated, scraping the bowl as necessary.
  5. Add some powdered sugar into a small bowl.
  6. Roll walnut-seized dough balls & roll them in the powdered sugar to coat.
  7. Place balls onto baking tray about 4cm apart from each other and slightly flatten with your hand. 
  8. Bake cookies for 9 – 10 min, then move them onto a cooling rack. They will look and feel like they aren’t done yet when you take them out of the oven. Don’t be tempted to put them back in – they will be just right once they’ve cooled down.
