Oh I love cinnamon! There’s something undeniably special about the warm, comforting aroma of the spice wafting through the house. These Cinnamon Swirl Cookies, or Zimtschneckenplätzchen, capture all the cosy goodness of a classic cinnamon roll in a yummy small cookie. Perfect for festive gatherings, afternoon tea or simply a treat to enjoy on your own, this recipe will quickly become a favourite in your baking repertoire.
Ingredients for around 50 cookies:
- 250 g spelt flour plus extra for dusting
- 1 tsp baking powder
- 75 g sugar
- 8g vanilla sugar
- 1 pinch of salt
- 1 egg (at room temperature)
- 125 g softened butter
- 75 g brown sugar
- 1½ tsp cinnamon

Let’s bake Cinnamon Swirl Cookies:
- Mix the spelt flour, baking powder, sugar, vanilla sugar and salt in a bowl. Add the egg and softened butter and knead into a smooth dough.
- Roll out the dough on a floured surface into a rectangle (approx. 30 x 35 cm) and lightly brush it with water.
- Mix the brown sugar with cinnamon, then sprinkle evenly over the moistened dough. Roll the dough tightly from the short side and let it rest in the fridge for about an hour.
- Preheat the oven to 180°C (normal, not fan). Line a baking tray with parchment paper.
- Cut the cinnamon roll dough into slices about 0.5 cm thick and place them on the prepared baking tray.
- Bake the cinnamon swirl cookies for about 12 min. After baking, transfer them with the parchment paper onto a wire rack to cool.
